Blackfish Distilling

I was at a Farmers Market last summer chatting with someone from Mosby's Farm (at least I think it was that farm) about alternative uses of their produce. The rep told me about their intention to seek out a local brewers/distillers to make something delicious and beautiful. Then I heard another rumor that a nearby distiller in the Kent, WA area was using local coffee, chocolate, produce, etc for their products. There are 3 distillers in the greater Kent Valley, so I went to the open one. I got lucky and found Blackfish Distilling was the distillery from both anecdotes.

Blackfish Distilling has a lot of products, probably too many, I was offered small tastes of Gin, Dry Gin, Barrel Aged Gin, Vodka, Rhubarb Liqueur, Blackberry Liqueur, Chocolate Liqueur, Coffee Liqueur, Aquavit, Rye Whiskey, Bourbon Whiskey, White Whiskey, and apple pie flavored Whiskey. That's 13 and they were out of a cucumber Vodka, and a longer aged Whiskey, so 15. The case/stand with products available for sale had options in 375mL and 750mL, but was mostly cleaned out of at least one size. The prices were reasonable, but the best thing was their lack of small size premium, so feel free to choose variety over quantity.

I would say by taste all their liqueurs were quite pleasant, as was their Aquavit if you have an acquired taste for black licorice, but their big 3 products (Vodka, Gin, Whiskey) left me a little underwhelmed. Vodka, Gin, and Whiskey are competitive categories with something like 20 local distillers within an 1 hour drive from me. Your product has to be unique or special (see the Liqueurs and Aquavit) or it is really difficult to differentiate yourself, unless you are the cheapest or best around. When I find the best or cheapest local option in category to my taste I will report my preferences.

I left with a small bottle of Rhubarb Liqueur, but will keep in touch, and look forward to their future local partnerships.
